Fazenda Santa Alina is a larger estate located in the valley of Sao Sebastiao da Grama. Farms from this valley have famously produced excellent, clean and unique Brazilian coffees. The terrain is ideal for growing coffee. Altitudes up to 1450m, abundant clean water, and volcanic soil all contribute to the beautiful terroir present in these coffees. Another element of Santa Alina's success is a processing center where most of their wonderful Bourbon coffees are dried on raised screens, providing even ventilation during the drying process and contributing to a very clean cup. Additionally, Santa Alina goes above and beyond in its services for farm employees with on-site physicians, a large community center with regular music and events, and two different churches. This year's Yellow Bourbon from Santa Alina contributes a ton of articulated sweetness, a touch of citrus zest, and abundant body to the Black Cat Classic.
Fazenda Saquerema is a medium-scale, organic coffee producer in Sul de Minas, Brazil. Producer Ricardo de Aguiar Rezende tends 90 hectares of coffees and produces both pulped natural and natural coffees. The Saquerama adds tons of luscious, heavy body to the Black Cat Classic.
Fince La Soledad (Acatenango) finished top 20 in the 2009 Cup of Excellence, which is a tremendous recognition of the Henio and Raul Perez's hard work. This farm demonstrates constant forward progress, and their investment to advancing quality and social and environmental responsibility stands out on each visit. They are in the final stage of their very impressive water treatment system and have started work on a cupping lab that will be built on the farm itself. They are currently working on some diversification with an innovative plan to produce avocado oil from the groves of delicious avocado trees on the farm. These guys are the definition of pro-active.
The Black Cat Classic is versatile, sweet and balanced and works well in every espresso beverage.
