Black Cat Classic is our flagship espresso blend and has been a reliable staple in our line-up since the day we opened our doors in 1995. Over time it has evolved in step with our own development as coffee professionals. As we’ve grown we’ve updated and polished the recipe, applying all of the lessons learned along the way in pursuit of an ever more delicious coffee experience. Today’s Black Cat is the culmination of that hard-earned wisdom, and a manifestation of our perpetual quest for balance and beauty in the cup. Although it has improved in many ways since its creation, the blueprint remains unchanged: sweetness and balance are paramount, and its subtle fruit and caramel notes must be clean, memorable and distinct. It is made to be both gorgeous as a straight shot and equally adept when paired with milk.
It shouldn’t be surprising that Cat, as it is known affectionately by most of our team, has become our best-selling blend by a long mile. It gets more scrutiny than any other coffee we produce. Our baristas work with it constantly, and our education and quality control teams meet weekly for Black Cat testing, in recognition of the fact that espresso is an elusive animal and with the understanding that to produce a consistently great one requires consistent effort. The result of all that attention is a coffee that lives up to the reputation it earned long ago as a comforting, easy-to-love and extremely versatile standard in the specialty industry.
In recent years it has taken its versatility to another level. We’ve found that some of our customers enjoy Black Cat so much that they drink it in many forms, with or without pressure. Though it was originally designed for espresso, its essential character is one that translates gracefully to filtered coffee settings as well. As it turns out, in our attempt to craft a satisfying and seriously pleasurable espresso blend we’ve managed to build one that holds its own quite well when brewed traditionally. In response to overwhelming demand, we’ve now begun testing the Cat regularly in filter form and have given it a separate, alter ego: El Gato. As we move through our seasonal coffee rotations we will take care to optimize El Gato for drip brewing, and ensure that it always delivers the sweet caramelized sugar and soft stone fruit tastes that make it purr.
